A concoction for the senses, one to cleanse the palate. Too much of one thing dulls our taste buds. Sweet here and there. Bitter here and there. There is balance. There is harmony in the poetry.
Do not allow the bitter to sit too long. The taste grows harsher as it ages. The bitterness forms itself into a thick, dense paste. This paste adheres to every surface, unwilling to let go. Building sticky layer after sticky layer, so thick that the sweet cannot penetrate the laden walls.
Where is that spatula? It is time to scrape this vessel clean. I want the sweet. I want the light and airy dessert. I had my meal, I am ready. I’ve washed the dishes. I’ve put everything in place.
I am ready to reward my tongue. Ready to enjoy and savor and delight in my senses.
